Certainly never a standard. Lots of users made/bought custom pickguards, some nifty, some, well, abominations. Standard Rickenbacker pick guards are plastic. Most are white, some more translucent (kinda see through) white, some black, and some (like the signature models) are back painted clear acryl...

Not as a rule. Retailers sometimes order a special batch in special colors, clear coats, and checker binding. But the shedua/walnut center strip has returned, and the new tailpiece, and (I think) the solitary dual-action truss rod are standard now. :)

Better to sand off finishes than to use a chemical stripper. Binding and position markers are plastic. Some of the first model 4000 basses were made with mahogany, but construction switched to maple and walnut as they were easier to work with. Check for more information in the book. :)
