Three pickup Ricks are cool but not necessarily better: I had a GREAT 340 but I just found that the middle pickup got in my way. So I'd go with the 360. But that's entirely a personal preference issue. Just don't assume that the fancier or "more desirable" Rick is always better for you.

It's old and uncommon, but something to think about: LAB Series L5. A great sounding amp, with a built-in compressor! I have one and I think it works really well with my 360 with Hi Gains.

As a very rough and general characterization, I would put Rick pickups somewhere on the continuum between Fender single coils and P-90s: not as bright and trebly as a Tele or Strat pickup, but not as much mid-range grunt as a P-90.
