When was Ric making the 325v59 with the larger headstock vs. the slimmer one or were they all the slimmer version?

The V59 never had a slim headstock, because slim headstocks weren't introduced until the 1960's.

All 325v59s had the large 80s/90s "paddlehead" headstock. The 325c58 has the correct '50s shape.
With the 325v63, the paddlehead was used until the mid-'90s or so, and then the shape was slimmed down to correct '60s specs, which continues on the 325c64.

Thanks, Gary, that's a great picture. It's interesting to see all the subtle differences, like the change of gold paint on the TRC and the slight 'flare' of the '90s headstock.
