I would go with the ones that feel conmfortable and adjust tone in the output. It's all in the feel.

My first one was A1 9796. This was the 11th built, in FG, and had no E1 option. Many of the earliest built did not.

The info on the limited production window is correct. It was November of 1999, IIRC.

Most 2000 RICs will have High-Gains. The factory did offer a VP (Vintage Pickup) option at the time, and you will also find many who have added the toasters to their RICs. That's a great question. Most people would assume that all fairly modern Rickenbackers are roughly the same. It's my experience that they are not. I left the strings off of "Rosie" for over a YEAR as I attended to other matters. It did not affect the neck at all. She set up beautifully afterward.
