Let me clarify the lack of condiments on a Southern Maryland stuffed Ham Sandwich.. the whole process takes hours on end.. one ham contains about 2 heads of cabbage 4 pounds of uncooked kale and lots of onions it is all chopped till your hands are ready to fall off then you add celery seed, mustard seed, crushed red pepper, black pepper, salt and ground red pepper to the chopped veggies.. let it sit for a half an hour or so and then stuff the ham cavity and peirce the meat to create holes to stuff more of the stuffing into..Then the ham is simmered for about 6 hours (which cooks all the veggies) On the Monday before Thanksgiving I chopped from 12:00 to 5:pm with a lot of friends we stuffed 15 beautiful hams... and drank and drank..(you know you have to stay hydrated when you are working so hard!) It is how we kick off the holiday season.. so to all who have never had the pleasure.. come to So. Md.. and we will fix you up with a proper stuffed ham sandwich.. now back to the "have you ever had one of those days... Let me tell you ... you heard the G rated version.. Am I ever glad it is better now.

Well said... to quote another famous rickenbacker player... you dont need anything on it but the bread and the meat, if you look at your teeth in the mirror we are carnivours, lets face it vegitarians fart and smell bad and if vegetables are so good for you... how come cows have to have 4 stomach's to sort all that sh"t out.

Yes, we are designed to eat at least some meat. Tammy, that sounds delish!!! I've never heard of anything remotely close to that, but I have led a sheltered life! (Sdak and all that. Steve, what a wonderful way to celebrate the fix! Oh BTW. nice work, but I am way more into this ham sandwich thang!!

John... it was lemmy (of motorhead fame) that made that statement and I agree totally.
The meat is the important bit and the bread is the obvious that turns it into a sandwich, anything else is something you expect to see growing out of the ground making ya garden look nice.
Keep it simple and enjoy it (a bit like rock n roll really)

Kale is a leafy winter veggie.. The story of Stuffed ham goes back to the early 1700's when the Jesuits lived in St. Indigoes Manor.. they had a long Easter fast and when they were done they were prepared a feast of what was available.. a country cured ham (we use a corned ham) fresh veggies and the spices that were available.. it is really a local speciality that has not traveled far from St. Mary's County. (although there are rumors that that emigrants from the county took the tradition to Kentucky. It was taken to the White House and served to the Eisenhower's in 1958 and at the worlds fair in New York in 1964-65 more than 28,000 orders of stuffed ham were served.
The stuffing has a good bite to it... it is best served with friends and lots of good laughter.. (that also helps with the preparations.)

I think we are omnivores…. And my profile will prove it. We humans eat just about anything!
Tammy – I think I have had this ham before… SO MD has some wonderful dishes … I especially like the ‘real’ crab cakes you get around the bay.
Knock on wood, I have never had one of those days with a guitar… a couple of near misses but no DOH! moments.
See now we are back on thread!
