I've actually expanded my use of the eight-string somewhat over the last couple of years. We tend to think of them as having a big, powerful sound (which they can and do have) but some of the stuff I've liked the best was on fairly mellow passages where I probably wouldn't have originally believed that it would be a good choice. It's still got deep power, but it's kind of a "power in reserve, used sparingly" sort of thing. Like this clip:
