Ahem. Barbecue is not steaks, burgers and...OK, there's beer, but not the other stuff.
This is slow smoked beef brisket, pork ribs, sausage and pretty much anything else. That other stuff is grilling. The terms may be interchangeable in other parts of the world, but not in Kansas City. Or Memphis, where I am currently posting from with a belly full of Rendezvous ribs and sausage. We did Graceland and Sun Studios today. It's not to be missed. Stax is tomorrow.
The best part of this gig is that we get to go to the volunteer area after the show and chow down on all the leftover contest barbecue. It makes it all worthwhile.

BBQ is different all over the US. Different regions use different meats (beef/pork) and sauces (mustard/ketchup/vinegar based). Here in South Carolina its mustard based BBQ pork. The best thing......its ALL good! =-)

BBQ is anything and everything here, Matt. If it's cooked outdoors it can be construed as a BBQ. Closed cover slow roasts, grills, etc. Of course a good quaffing red will always add to it.
As Jwilli said..... it's all good!
