Did all vintage 365's from the '60s come from the factory with a roller bridge, or is this bridge an after-market accessory?

**most** Ricks that were mounted with a vibrato all had roller bridges. There are random exceptions to the rule, but generally they all had a roller bridge (which typically rattle badly..).

Does that rattle still exist when talking about a 2012 built 325?

All roller bridges I ever had rattled to some degree. I have found they don't really help with tuning issues anyway. If your guitar is set up properly and your nut is cut right any bridge will work just fine with a trem.
