I'm wondering if these HiGains are original to my 1982 360...
I haven't seen photos of older HiGains without the center hole in the magnet. It also looks like the face/bobbin top may be Bakelite?
Are the button tops typically staggered, height-wise?

Yes, those are the second version of the Hi Gain pickups - commonly called "button top" style (to differentiate from the earlier exposed thread polepiece "transitional" Hi Gains).

The bobbin on the button top style pickups was made of a green PCB type material painted black. If you open the pickup, the opposite side of the bobbin is usually still green. I have seen others from that era (1973 through late 80s) without the center hole in the magnet, the lead usually coming out the side.

The polepieces of the button top Hi Gains are indeed staggered, and fixed.

Later version of the Hi Gain started using the same bobbin as the toaster pickups and then more recently added adjustable polepieces.

Your pickups are identical to the pickups in my old 1983 330 (top and bottom), which was stock.
