He gets a very different but cool vintage vibe out of his Rick.

IMO the Duncan 59 is a good choice. It's my all around favorite. SD also has a Jazz model that might work well. I would think any lower output humbucker should serve you well. From what I've read, the Ibanez guitars get good reviews in stock form but I would think upgrading to any better quality ...

Welcome Matt ,from another YouTuber. Your video is quite creative compared to my "sitting by the table" one. :) The main thing, for me, is having fun and turning people on to Rickenbackers.
