I've had a good search around, but I'd just like to point out Tom Gabel from punk/folk band Against Me! He's been playing Ric 360s on their last three studio and one live album(s).
As well as being a great song writer, the playing of his Ric is unmistakeable. He is a GREAT rhythm player and knows exactly when to play and when to not!
My band in Australia has had the privilege of playing with them twice and he always has a different Ric with him (always 360) so he must have quite a collection. Anyways Ric enthusiasts - check him out!!!
