Jim Thomas, guitar player with the Mermen, did exactly this with his custom Str*ts - no on-board volume or tone controls.

Rick Turner did an article years ago in BP about an all bypass switch to remove the controls. You will find the tone to be better with greater clarity. In the words of the immortal Jared:

I did this to my old Guild Starfire bass, only a volume for each PU.I even removed the toggle switch.Frankly, I like it better now.YMMV...
