Just about any Western with Clint Eastwood... but particularly The Good, the Bad and the Ugly and Unforgiven. I also have a soft spot for the Coen brother's version of True Grit.

I like "Pale Rider" about the best for westerns with Clint Eastwood. I don't know if mountain man films qualify as "Westerns" but they should. I like Jeremiah Johnson (Robert Redford, Will Geer) as well.
