New Toaster pick-up Question

I have a couple of re-issues that have the old, new toasters(11 ohm?). How big is the difference in sound between the new 7 ohm and the 80's 11 ohm PU? Is it just a volume difference? I know many of you have unwound or rewound your PU's to vintage specs.
Any thoughts?
