DO NOT DO THIS!!!! Police Officers are not to accept any gratuity no matter how benign. You can get them into serious trouble because it can look like a bribe.

So do I. I'm a city employee and any kind of gift is considered a gratuity.

I gotta say one more thing about thanking the cops. While I never have looked for attaboys in my profession (I'm not a cop) they are nice when they happen. Plus, come promotion or raise time they look good in the personal folder. They may have just been 'doing their job', but a public 'Thank You' never hurt anyone. Too often we tend to only recognize folks when they mess up, I personally like it the other way around. Regardless, getting your stuff back is sure enough golden!
