Late to this thread, but that '59's neck was unbelievably gorgeous.

If you get a lower-priced digital audio recording interface you should be fine because all you need are two inputs. The interface will come with a lite version of recording studio software which is all you need there, too.
Something like a Digidesign Mbox 2 Mini is probably just right.
